Try as I might, nothing works to get the Canon to STOP using the color cartridges. I want to use only the black and there is NO option to do that from the menu. I've uninstalled it in the meantime and re-installed the appropriate driver. I have OS X Yosemite 10.10 something...the latest one. Any STEP-BY-STEP solutions?

You're uusing OS X 10.10.5 presumably, as that's the most current 10.10 Yosemite release.
Wouldn't be the first time that a printer either required the color cartridges be present, or that the printer always used color, for that matter.
Sorry for the late reply. I was too busy restarting this incredibly slow computer over and over. I'm frustrated to no end with this printer. It's the CANON MG6620. Soon, what's the solution? Should I just downgrade to a lesser, older operating system/ I'm on the verge of just telling Canon to take this **** thing back and be done with it
Canon only lists support for that printer through OS X 10.9, or with Windows 8.1 and prior. (Looks like it might be a retired product?)
I'm rather more familiar with Brother printers, and don't have a Canon handy to confirm the following suggestions. See if this Canon sequence works. Based on some comments over there, that may be stale, however. If that's not it, the following is one of the related controls on the Brother — select that as Mono. Not all printers have the same settings available, unfortunately.
Same problem with MG7700 series. When you open the print dialogue box click on preview select quality & media and then tick the greyscale box. If you then click on presets you can save it. I just called it greyscale. Why Canon doesn't display black and white in the dialogue box is beyond me.
